When I first started working in a kitchen, I had no idea what I was getting myself into. At first, everything seemed overwhelming – there were so many people and so much noise! But with time, I learned to embrace the chaos of the kitchen. And through my experiences as a chef’s apprentice, I learned some important confessions about what it’s really like to work in a kitchen.

Confession #1: The food is never as good as you imagine. There are times when we would slave over a complicated dish for hours, only to be disappointed by how it actually tasted once it was served to customers. Despite all the effort that goes into cooking in a busy kitchen, there is always going to be an element of uncertainty.

Confession #2: You will burn yourself on hot pans multiple times per day. Working with stoves and blazing-hot cast iron is part of the job – and you definitely need tough skin for this role! Countless blisters and scars have formed from careless mistakes like touching pans too soon after they’ve been taken out of the oven. But with time, you learn how to work smarter, not harder.

Confession #3: There is always more work than you can handle.
